The skinless walnuts make a difference because these bites are not only smoother, but they allow for the natural sweetness of the dates to really come through. No refined sugar. No baking. Just real ingredients doing what they do best.

They’re also easy to switch up for when your tastebuds are looking for something different. Roll them into some sweetened coconut flakes or finely chopped walnuts. Mix in some chocolate chips. Drizzle on some black sesame walnut butter. Start here and make them your own.
Directions
- Roughly chop the dates into ½-inch pieces to prevent sticking.
- Add the shredded coconut to a food processor and pulse until finely ground.
- Add dates. Pulse until the dates break down into a chunky paste. Scrape down the sides as needed.
- Add the skinless walnuts and continue processing until the mixture starts to clump.
- With the processor running, slowly drizzle in the sesame oil.
- Roll into 1-inch balls (makes 12) and refrigerate for at least 1 hour, until firm.
Notes
- For an oil-free version, toast the walnuts beforehand to help release their natural oils during processing.
- Geoff prefers these with a pinch of sea salt, but Sue thinks they are perfect as is. Try both out for yourself.
