We discovered this salad thanks to a review someone left on our Amazon listing. Since learning about it, we've made it a handful of times and wanted to spread the word. It's a great quick and easy dish to whip up as a side or even a simple lunch.

3 large tomatoes

½ green pepper

½ white onion

1 Persian cucumbers

¾ cup walnuts

¼ cup parsley

¼ cup mint

¼ cup extra virgin olive oil

4 tbsp pomegranate molasses*

1 tsp sumac

½ tsp salt
Salad Dressing
Directions
Chop tomatoes, green pepper, onion, cucumbers, walnuts, parsley, and mint. Put everything in a large bowl.
Mix olive oil, pomegranate molasses, sumac, and salt in a small bowl and pour it over everything else. Stir and combine!
Recipe Note
If you don't have pomegranate molasses, try balsamic vinegar.
We loved this right after it was mixed, but you can also let it sit in the refrigerator for 20-30 minutes to let everything soak up the dressing.
